Escabeche Green Bananas

Pickled bananas are a delicious typical Puerto Rican dish, we all love them for their incredible flavor and versatility.


  • 8 green bananas
  • 2 onions
  • 6 bay leaves
  • 1/2 tbsp black pepper
  • 4 cloves of garlic
  • 2 ½ tbsp olives
  • 1 ½ cup olive oil
  • 1 cup white vinegar
  • Salt to taste
  • Marinade to taste (optional)

Let's cook this deliciousness!

Peel the green bananas. Place them in a large pot with water and salt. Boil for about 20 minutes or until soft but not falling apart. Check doneness by inserting a fork.

While the bananas are cooking, we are going to make the pickle. Cut the onions to your liking, set aside. In another medium pot or skillet, add the oil, vinegar, pepper, garlic, olives, marinade, salt and bay leaves. Add the onion. This mixture is cooked over medium-low heat for about 10 minutes or until the onion softens to the desired degree. At this point we are going to add the vinegar, but little by little, since it will depend on how much intense flavor you want, you taste it to check the point you are looking for.

Once the bananas have been cooked, drain them carefully, preventing them from breaking. Cut them into pieces of the size of your preference and add them to the container in which you are going to serve them (preferably one with a lid), then pour the pickle on top. Reserve in the refrigerator, and let it marinate, the longer it marinates, the tastier it will be! Serve it at room temperature with the accompaniment of your choice. Yumi!
