Tembleque de Coco

This delicious dessert was born in the Caribbean and is a delight for the palate. We enjoy it very much, especially at Christmas time.

Portions (+8 people)


2 ½ cups coconut milk
½ cup coconut cream
1 cup water
1 cup sugar
¾ cup cornstarch
1 teaspoon vanilla essence
1 pinch of salt
Ground cinnamon (optional for garnish)
Shredded coconut (optional for garnish)

Let's prepare this deliciousness!

Before you start, measure and have all the ingredients at hand. Over medium heat, in a saucepan add the coconut milk, vanilla and pinch of salt, stir until well integrated. Then add the sugar and stir until completely dissolved. Add the cornstarch and water, at this point you can't stop whisking even for a moment, continue whisking vigorously! Scrape the bottom of the pan to prevent the mixture from sticking. Add the coconut cream, continue stirring for a couple of minutes until you get a thick mixture.
Pour the mixture into a mold, and let it refrigerate overnight. The next day, carefully flip it into the serving bowl, sprinkle cinnamon powder and shredded coconut on top (both are optional to your taste). Ready, enjoy!
