Locrio de Cerdo
This recipe is one of the favorite dishes among Dominicans.




  • 4 cups of Rice.
  • 4 cups of water.
  • Peeled and mashed garlic
  • 2 pounds of pork to cook with skin
  • 1 tablespoon of tomato paste or bija
  • 1 large red onion
  • 1 Ají Cubanela
  • Leek, Vegetables, Coriander and Salt
  • 1 tablespoon of sugar to brown the meat


Season the meat with all the processed ingredients except the coriander.

In a little oil add sugar until golden brown and color the meat for a few minutes.

Add the water to the meat. Once it begins to boil, add the rice, tied coriander and stir frequently until the rice dries.

Once dry, cover and let simmer for half an hour.

Served with green salad or the one of your preference
