Green plantain is widely consumed in Dominican homes. It is the base of the
popular mangu, which is made with mashed plantains, softened with water,
a little butter or olive oil. The equally famous tostones are also made with
bananas and it is also the base of the traditional mofongo. Green plantain has
nutritional properties, as it contains vitamins, minerals and fiber.
