Servings (15 - 20 people)


  • 50 pounds of pork or pernil
  • 2 tablespoons black pepper
  • ½ cup crushed garlic
  • ½ cup vinegar
  • ¼ cup salt
  • 3 tablespoons oregano
  • ½ cup of oil of your choice
  • 1 cup of sofrito
  • ½ tablespoon marinade
  • 4 sazón sazón with cilantro and annatto

Let's prepare this suckling pig!

Wash the pork very well with cold water and vinegar, then dry it. Prepare the marinade by mixing all the ingredients well, marinate the pork both outside and inside. Place the pork on a platter and cover it, leave it in the refrigerator for 12 hours. Put the pork in a baking dish and tie the legs. Bake for 5 to 8 hours at 300º F (170º C -180º C).

Secret to crispy skin: don't marinate the outside, just add salt to the entire skin. Take out of the oven, serve and enjoy!
