We all enjoy a sancochito, and the best thing is that there is no time or date on the calendar to enjoy this traditional Latin dish.


2 lbs chicken or hen
1 lb pork meat
1 lb beef
1 lb ribs
8 oz chopped longaniza sausage
3 tablespoons adobo
2 tbsp vegetable oil
2 lbs of diced pumpkin
4 ½ liters of hot water
1 cubanela chili bell pepper
1 lb yam cut in small pieces
1 lb white yautía cut into small pieces
1 lb yucca cut into small pieces
3 cups green plantain cut in small pieces
4 ears of corn cut into one and a half inch slices
2 chicken broth tablets (optional)
1 small package of vegetables or fresh cilantro
2 celery stalks
1 red bell bell pepper
2 to 3 sprigs of culantro ancho
2 sour oranges or lemons (juice)
1 teaspoon dried oregano
2 tablespoons minced garlic
1 medium onion
Salt and pepper to taste

Let's cook this delicious broth!

Cut the pork and beef in pieces, and the chicken in pieces, season with the marinade, oregano, salt and pepper, set aside. In a deep pot with a thick bottom, heat the oil over medium high heat, when it is hot, sauté the beef and pork until seared (this will keep the juices inside). Cover and cook until tender, adding water from time to time. In another pot, cook the chicken until seared and tender, set aside. After the beef and pork are cooked, in the same pot add the sausage and ribs, cook until everything is at the desired point. Then add the water, when it starts to boil, add the food, the corn and the chicken. Simultaneously, in a small pot boil the bell bell pepper, celery, garlic, onion, chili bell pepper, pumpkin and a pinch of salt. Let cool and blend, then strain and add to the main pot. Add the vegetables, cilantro and orange sour, taste for salt, and if necessary add the chicken stock cubes. Cook for a few more minutes until desired consistency. Remove from heat, serve and enjoy!
